The text does cover all areas and ideas of the subject; however, there is no index and glossary. Links are provided to access other books and/or websites for more information.
The textbook provides links to mostly recent literature to support the claims in the text.
The book can be quickly updated by performing literary search and re-writing to include new knowledge.
The book is written in a friendly manner for a non-scientist person to read and understand.
The text is very consistent. Acronyms are defined when they first appear.
Overall, the text is easily and readily divisible into smaller reading sections/paragraphs. The "story" of each section is easy to follow.
The book starts with tables and figures, and the reader has to scroll through to find the introduction. Initially, it is confusing in trying to logically follow the book.
There are links that don't work. Probably, it needs to be updated.
There are no noticeable grammatical errors.
The book lacked examples of a variety of races, ethnicities, and backgrounds. For example, the text discusses the Mediterranean diet; however, this diet is not part of many cultures.
Although the textbook provides recent information on culinary medicine, it lacks organization and examples of culinary styles of nutrition from different cultures.

This electronic textbook (eBook) and/or eBook chapters are designed to accompany NS801, Precision Nutrition and Advanced Culinary Medicine, a 1-credit, 8-week online medical elective course for the University of Kentucky College of Medicine Office of Medical Education curricula. Reading for the course will be labeled to align with the content of the online course; such that Module 2 is aligned with Chapter 2, Module 3 with Chapter 3, and so on. As an open access textbook supported by the University of Kentucky Libraries Alternative Textbook program, all sources will be linked and readily available.

Author
Sara B. Police is an assistant professor at the University of Kentucky College of Medicine. She develops and teaches graduate and professional-level nutritional sciences lectures and courses and serves as Director of Nutritional Sciences Education and Director of the Online Graduate Certificate in Applied Nutrition and Culinary Medicine. She is the recipient of two University of Kentucky Libraries Alternative Textbook Grants (2019, 2021) and the 2021 Outstanding Teaching Award.
