Our students take a 3-credit nutrition course in their junior year that covers how nutrition promotes wellness and prevents illness. Foundations, however, covers the topics of obesity, Body Mass Index measurements, and how to use nutrition to manage and treat illness. This book could be used to introduce students to these topics and more. It includes information on how to care for clients across the lifespan from pregnancy and infancy through later adulthood. I found the section “The History of Nutrition in the Provision of Client Care” particularly helpful. Several areas of the book discuss the effects of social determinants of health on food security, food literacy, and food choices. Authors address special considerations for vulnerable populations including children and older adults.
